Les Maisons Marcon

Here the spirit of sustainable development and of handing down a craft takes on its full meaning. The Marcon family loves to cultivate harmony between people and nature down to the smallest detail, in its hotels, its spa, its gastronomic restaurant and, of course, at every stage in the making of the plates. Through this publication, Régis & Jacques Marcon wanted to showcase the Auvergne region, and also to give pride of place to their loyal producers, partners in every moment, in the constant search for new flavours.

Régis and Jacques Marcon, three stars handed down from father to son

On the Boutières plateau, in Saint-Bonnet-le-Froid, Régis Marcon built a cuisine around the mushroom before entrusting the stoves to his son Jacques. The table has held three Michelin stars since 2005, true to its terroir: chestnut, green Puy lentil, Mézenc beef, Velay lamb.

The editorial project

Telling the story of the Ardèche, Saint-Bonnet-le-Froid and the Maisons Marcon.

The magazine links the gastronomic table to all of the Maisons Marcon — hotel, spa, bistro, wine cellar — and to their producers on the Boutières plateau and in the Ardèche. It accompanies the reader from the kitchen garden to the plate, from the sommelier to the wine estates he has selected.

Each section is signed with a green banner laid over the photographs, and a motif opens and closes the publication. Black and white serves the gesture and the workshop; colour serves nature and produce.

It is an aquatic facility, positioned so as to minimise its visual impact. The project is a “sculptural object” that sets a new direction and dimension in its surroundings while keeping a certain continuity with the existing codes. It won an award at the international architecture competition “Pool Vision” in 2016.

Six independent winegrowers, each with recognised expertise within their appellations, are driven by a desire to exchange ideas and enrich one another’s practices. They place particular trust in sommeliers and independent wine merchants, and have chosen to work exclusively with the traditional trade, which alone gives full consideration to the wines and to the craft of the winegrowers.
