Christophe Bacquié, a hundred-hectare estate between Provence and Tuscany

On the heights of the medieval village of Le Castellet, the estate extends over a hundred hectares, between Provençal and Tuscan architecture. The 42 south-facing rooms open onto the park or the pine forest. The gastronomic restaurant was redesigned by the architect Yvann Pluskwa, echoing the chef's cuisine.

The editorial project

The chef's table, told through to its suppliers

The magazine follows chef Christophe Bacquié through to his suppliers: Kaviari caviar, Dupérier & Fils foie gras, the Pilato fishmonger, Chaudronnerie de l'Isère stoves, and restaurant décor by Yvann Pluskwa. A single story links the table, the cellar and the estate.

Here, each chapter opens with a section word in large pale capitals — SUD, NATURE, BALADE — on a sage-green ground. Photographs by Laurence Barruel.

01Atelier Adeline Dutel

The living spaces of gastronomic establishments are very often enlivened by works by artists, such as those of the “Atelier Adeline Dutel”. Recently settled in the Luberon, near Lourmarin, she now paints on canvas. Her current theme is vintage cars from the years 1950 to 1970, which lets her combine her passion for graphic design with a taste for the vintage. She often creates paintings to personal commission.

02Atelier d'Architecture Yvann Pluskwa

Yvann Pluskwa imagined the Christophe Bacquié restaurant by drawing on the Chef’s personality. A great rapport grew between these two artists, who sought to convey the emotion that links gastronomy and decoration. Resolutely contemporary and timeless, the tables, armchairs and ceiling alcoves have been rethought to accompany guests through an extraordinary culinary experience, in the hope of a more intense and better shared tasting. The evocative, authentic decor is a silent, poetic foretaste of the gastronomic moment to come.

03Caviar Kaviari

Osciètre, Baeri, Beluga, Kristal... the caviars selected and matured by “Kaviari” inspire the greatest chefs, who vie in creativity to celebrate the precious black pearls in their own way. We like the Caviar de l’Esturgeon Blanc, dark grey in colour, with a supple yet firm texture, iodine fragrances and notes of fresh walnut, but above all the “Kristal”, for its firm grains, its golden colour with grey glints and its taste of almonds. A perfect companion to refined dishes, it delights and invites you to bite into it. “Kaviari” invites chefs to create an original caviar recipe for the “Caviar Box”, on a seasonal theme.

04Chaudronnerie de l'Isère

The “Chaudronnerie de l'Isère” is the specialist in making professional range cookers. The “CDI” stove is the essential. In 2012 the group created the “Vatel” brand, high-quality stoves made entirely from noble materials: stainless steel frame, copper piping, brass taps and enamel finish, a range intended for private customers. Quality, demanding standards and “made in France” manufacturing, with the greatest respect for an ecological approach.

05Domaine de l'Olivette

Terrace by terrace, the “Domaine de l’Olivette” descends from the hills towards the sea. Awarded a Gold Medal at the Concours des Grands Vins de France in Mâcon, the special cuvée Domaine de l'Olivette Rouge 2003 AOC Bandol is on the wine lists of fine restaurants. Its garnet-red colour is dense and deep, with an intense, refined and complex aromatic profile. The scents are many: blackcurrant, garrigue and undergrowth, with notes of roasting and spice. Well balanced, the tannins are generous and refined, showing fine concentration. The finish is long and harmonious, with a superb fullness on the palate. Cultural events and concerts take place in summer, and wine tastings are held in the cellar throughout the year.
